Pappardelle Pasta with Beef Ragu

- 1 pound Pappardelle pasta
- 2 tbsp Olive oil
- 1 lb beef chuck, cut into 2-inch cubes
- 1 Onion, diced
- 2 Garlic cloves, minced
- 1 Can tomato sauce
- 1 Can crushed tomatoes
- 1 cup Red wine
- 2 Bay leaves
- Salt and pepper, to taste
- Parmesan cheese, to garnish
Instructions
- Heat the olive oil over medium-high heat in a Dutch oven or a large pot. Season the beef with salt and pepper and brown on all sides, working in batches if necessary. Transfer the beef to a plate and set aside.
- Add the onions to the pot and sauté until soft and translucent, about 5 minutes. Add garlic and sauté for another 30 seconds.
- Add the tomato sauce, crushed tomatoes, red wine, bay leaves, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 2 hours.
- Cook the pasta according to the package instructions. Drain and set aside.
- Remove the beef and bay leaves from the pot. Using two forks, shred the beef. Return to the pot and stir to combine.
- Add the cooked pasta to the pot and toss to combine. Serve hot with Parmesan cheese on top.

- Add the fresh tomatoes, tomato sauce, vegetable broth, basil, and oregano. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- Cook the pasta according to the package instructions. Drain and set aside.
- Add the cooked pasta to the skillet and toss to combine. Serve hot with Parmesan or Mozzarella cheese on top.
